Bitter Gourd Fry – An easy-to-prepare bitter gourd fry with a tinge of tangy flavor.

Bitter Gourd Fry

Cooking bitter gourd so as to make it palatable is a difficult task as it is the least preferred vegetable. This recipe was given to me by my friend’s mom years ago. It is simple with only a few ingredients. The secret ingredient tamarind removes the bitterness to an extent and makes the bitter gourd taste better. It is a well fried dry side dish with a tinge of tangy flavour that goes great with rice. You might end up trying it again and again just as I do

Heat oil in a pan → Add mustard, chopped bitter gourd → Fry for 2 min → Add salt & tamarind extract → Saute for 5 min → Add grated coconut & chilli powder → Fry till done.



  • 250 g Bitter gourd
  • 2 tbsp Tamarind extract
  • 1 tbsp Grated coconut
  • 1 tsp Chilli powder
  • 1/2 tsp Mustard
  • 2 tbsp Oil
  • Salt as required

How to make Bitter Gourd Fry?
1. Wash and cut the bitter gourds. If the seeds are tender you may use it else discard it.
2. Heat oil in a pan and add mustard. Once it splutters, add the chopped bitter gourd pieces.Bitter Gourd Fry - Step 1_New3. Mix it well and fry for 2 or 3 minutes. Add salt and tamarind extract. Saute for 5 minutes.Bitter Gourd Fry - Step 2
4. Add finely grated coconut (grind the grated coconut without water in the mixie for a few seconds), chilli powder and fry till done. Add oil in between if required.Bitter Gourd Fry - Step 3


  • Keep frying in a medium flame to avoid burning of the vegetables.
  • Sprinkle water in between if the mixture turns too dry.
  • Do not cover and cook. If you cover it, the water droplets might make it soggy and the result might not be a well fried dry side dish.
