Homemade ghee from butter recipe with video and step by step photos. Ghee is inseparable from the indian cuisine. I guess it is one of the very few ingredients that could be used with almost anything – biryani, sweets, dosa, idli, chapati, idiyappam, traditional snacks and dal to name a few. If the quality of the ghee is poor, it has a major impact on the taste. The fact that homemade ghee makes excellent biryani and sweets is undeniable.

I grew up in a place where we get a supply of cow’s fresh milk everyday. The curd made from it has a unique smell and taste. The layer formed on top of milk, after boiling and cooling it down has a beautiful yellow colour. My mom collects those layers which we call ‘paal aadai’ in tamil and makes fresh ghee from scratch. Nothing can beat the taste and smell of that ghee. There are many fans out there for the drumstick leaves which is added at last. It will be gone in no time 🙂 

Here I dont get any ‘paal aadai’ in milk after boiling and cooling it down  So I started making ghee from unsalted butter. This also smells and tastes great! A few tips should be kept in mind while making this. So here is the recipe to make ghee from butter.

Heat butter in a large pan → Let it melt → It will start bubbling after sometime → Then it will start foaming → After sometime, it will start bubbling with big bubbles → Size of the bubbles will reduce gradually →  Bubbles will reduce to form foam-like layer on top → Throw in curry leaves or drumstick leaves & rock salt crystals (optional) → Switch off the flame → Cool, strain & store.


Ingredients : (1 cup = 240 ml)

  • 1 cup or 225 g Unsalted Butter (at room temperature) 
  • A sprig of Drumstick Leaves / Curry Leaves
  • 3-4 crystals of Rock Salt

 How to make ghee from butter?

1. If the butter is cold, let the butter come to room temperature. Cold butter might start burning soon. It is always better to use butter at room temperature for making ghee.
2. Take the butter in a large, heavy-bottomed pan. Use a large pan as the butter might overflow while cooking.
3. Heat over low flame till it melts. The entire process should be done over low or low-medium flame to avoid burning of butter.
4. Now the butter will start bubbling. (it started bubbling after 4 min for me. This may vary with the quantity and temperature of butter). The liquid will be thick now. Keep on stirring now and then.
5. After sometime (it took 5 min from step 4), the butter will start foaming.
6. The liquid beneath this foam will start becoming clear.
7. Milk solids will also start separating. Keep on stirring now and then.
8. Now the liquid will start bubbling with big bubbles (it took 3 min from step 5).
9. The size of the bubbles will reduce gradually.
10. When the bubbles reduce to form foam-like layer on top, throw in the curry leaves or drumstick leaves and rock salt. Switch off the stove. Salt is added so that the milk solids settle at the bottom. As I don’t get rock salt here, I do not add it while making ghee. But I get the same result everytime. Curry leaves / drumstick leaves add a very good flavor to ghee and the fried leaves taste yummy !
11. Let it cool down. Now you will get a clear golden colour liquid. Milk solids would have settled at the bottom.
12. Strain the liquid.
13. Store the ghee in a clean dry container. Homemade ghee that smells heavenly is ready !

Notes

  • Use good quality butter.
  • Use butter at room temperature for making ghee. Cold butter might start burning soon.
  • Curry leaves / drumstick leaves adds a very good flavor to ghee.
  • If you switch off the flame before the right stage, the flavor of the ghee will not be good. It might not even smell like ghee.
  • The entire process should be done over low or low-medium flame.
